中式卷烟消费体验感官评价方法的建立与应用

Development and Application of Consumer Experience Sensory Evaluation Method for Chinese-style Cigarette

  • 摘要: 为了从消费者的角度对中式卷烟产品进行感官质量分析,将消费者的语言转化为专业技术语言,结合模糊综合评价方法,建立了中式卷烟消费体验感官评价方法。结果表明:①该方法包括评价指标、评价术语、指标权重分配、评价要求和数据处理方法,具有较强的可操作性。②采用两级综合模糊评价对感官评价结果进行分析,能够判断卷烟产品的轻松感、舒适感、满足感及整体感官质量所属等级,并计算出相应的评价分值。

     

    Abstract: In order to analyze the sensory quality of Chinese-style cigarette from the angle of a consumer, a consumer experience sensory evaluation method was developed via translating the consumers' expressions into professional terms and combining with fuzzy comprehensive evaluation method. The results showed that: 1) The developed method involved evaluation indexes, evaluation terms, assigning weight to each index, evaluation requirements and data processing method, and the above procedures were fully workable. 2) The obtained results were analyzed by two-stage fuzzy comprehensive evaluation to judge the ranks of cigarette products concerning feelings of relaxation, comfort and satisfaction, and comprehensive sensory quality and calculate the corresponding evaluation scores.
