Abstract:
The sensory quality of 337 flue-cured tobacco samples from Yunnan and Fujian harvested in 2012 and 2013 was evaluated,the chemical components of the same were analyzed,and the results were subjected to
t test,correlation analysis and regression analysis.The sensory evaluation showed that the samples from both Yunnan and Fujian featured the attribute of fresh flavor style accompanied with the main aroma characteristics of fresh-sweetness,hay-like and burnt scents,and fresh-sweetness scent significantly negatively correlated to green scent.Fresh-sweetness scent was more outstanding in the samples from Yunnan,as was green scent in the samples from Fujian.The results of chemical analysis indicated that the most significant differences were:the potassium content was significantly higher in Fujian samples,while the chlorine content was higher in Yunnan samples.The correlation analysis between aroma note and chemical components showed that the fresh-sweetness and green notes of Yunnan flue-cured tobacco significantly correlated to reducing sugar content,potassium content and potassium/chlorine ratio,while the fresh-sweetness and green aroma notes of Fujian flue-cured tobacco did not significantly correlate to routine chemical components.Therefore,the green aroma note can be used as an important indicator to distinguish Yunnan flue-cured tobacco from Fujian one.
