Style simulation and substitution of Brazilian tobacco based on near infrared spectrum and sensory evaluation

  • 摘要: 为缓解国内卷烟工业企业巴西烟叶库存短缺压力,开展了利用国产烟叶进行替代的研究。整体替代研究分为风格模拟和品质优化两部分,采用近红外光谱投影和风格标定,构建由典型片烟样本组成的风格分布图,遴选主体风格与巴西相似的国内烟叶模块;结合化学与感官评价,利用模块化配方技术对模块品质进行优化调整,并在卷烟产品中进行替代应用。结果表明:近红外光谱显示湖北烟叶与巴西烟叶整体风格较为接近;通过配方优化调整,可以实现用湖北中部、湖北上部和湖南上部烟叶形成的配方模块(ZH-3)替代巴西烟叶;ZH-3模块在国内一二类卷烟品牌某产品中能够实现5%的巴西烟叶替代。

     

    Abstract: To alleviate the shortage of Brazilian tobacco in stock, the substitution of domestic tobacco for Brazilian tobacco was studied from two aspects, flavor style simulation and quality enhancement.By incorporating near infrared spectral projection and flavor style calibration, a flavor style distribution diagram of typical tobacco strip samples was established, and a domestic tobacco module with the major flavor style similar to that of Brazilian tobacco was screened out.The quality of the tobacco module was further enhanced by blending technique combined with chemical and sensory evaluation.The tobacco module was used as a substitute for Brazilian tobacco in cigarette production, the results showed that the near infrared spectra indicated that the style of Hubei tobacco was closest to that of Brazilian tobacco in general; the blended tobacco module(ZH-3)composed of middle and upper leaves of Hubei tobacco and upper leaves of Hunan tobacco could substitute as Brazilian tobacco; module ZH-3 was able to replace 5% of Brazilian tobacco in certain cigarette brands in Category Ⅰ or Ⅱ.
