烟草缬氨酸对主流烟气成分的贡献

Contribution of tobacco valine to mainstream cigarette smoke components

  • 摘要: 为了解缬氨酸对卷烟烟气成分的贡献,以稳定同位素标记的缬氨酸进行烟丝添加,采用GC/MS检测卷烟主流烟气粒相和气相成分,研究缬氨酸与卷烟烟气成分的定性关系和量效关系。结果表明:①缬氨酸参与了烟气中2-甲基丙醛、3-甲基丁酸、甲基吡嗪、异丁烷、2-甲基-1-丙烯和2-环戊烯-1-酮等化合物的生成;②烟丝中缬氨酸对烟气中2-甲基丙醛的贡献率达69%,对其他5种化合物的贡献率均小于5%,缬氨酸对烟气感官的影响主要来自2-甲基丙醛释放量的增加;③生成的2-甲基丙醛分子中的碳原子均来自缬氨酸分子。

     

    Abstract: To investigate the contribution of valine to cigarette smoke components, stable isotope-labeled valine was added into cut tobacco, and qualitative and dose-effect relationships between valine and cigarette smoke components were studied by analyzing the particulate and vapor phase components in mainstream cigarette smoke with GC/MS. The results showed that:1) Valine participated in the formation of 2-methypropanal, 3-methylbutyric acid, methylpyrazine, isobutane, 2-methyl-1-propylene and 2-cyclopenten-1-one during smoke formation. 2) Tobacco valine contributed about 69% of 2-methypropanal in the smoke, and its contribution rate to the other five compounds were less than 5%. The olfactory effect of valine on cigarette smoke was mainly due to the increase of 2-methypropanal in smoke. 3) All carbon atoms in the formed 2-methypropanal structure originated from valine.
