烟叶原料配伍性感官评价方法的建立与应用

Development and application of a sensory evaluation method for tobacco leaf compatibility

  • 摘要: 为了给烟叶间的配伍性规律分析提供方法支持,在借鉴烟草感官评价方法的基础上,建立了包含评价指标、评分标度、评价要求和结果表述等的烟叶原料配伍性感官评价方法,从彰显性、提升性、改善性和融合性等4个一级指标得分及总体配伍性得分对原料间的配伍性进行综合定量评价,并应用该方法分析了不同比例龙江烟叶模块与典型产地烟叶间的配伍性。结果表明:在实验设定梯度范围内,龙江烟叶模块与典型产地不同香型风格的烟叶间配伍性存在差异和最适比例,龙江烟叶仅以低比例掺配时才与清香型烟叶具有相对较好的配伍性,而与贵州铜仁中间香型烟叶配伍时的最适比例为10%,但与浓香型烟叶的整体配伍性较好,并且在实验梯度范围内随掺配比例增加,其总体配伍性得分稳步提升。建立的烟叶配伍性感官评价方法可准确定量地描述烟叶原料间的配伍性,为烟叶模块组配和叶组配方设计与维护提供方法支持。

     

    Abstract: In order to provide methodological support for the compatibility analysis of tobacco leaves, a sensory evaluation method was developed by referring to known tobacco sensory evaluation methods. The developed method consisting of evaluation items, scoring rubrics, evaluation requirements and result expression could comprehensively and quantitatively evaluate the compatibility of tobacco leaves with four first-level indexes, including prominence, promotion, improvement and integration, as well as the overall compatibility score. The compatibility between the Longjiang tobacco leaf module with different proportions and typical tobacco leaves from different production areas was analyzed using the developed method. The results showed that within the gradient range set by this experiment, there were differences and optimal proportions in the compatibility between the Longjiang tobacco module and tobacco leaves with different flavor styles from typical production areas. Longjiang tobacco leaves showed relatively good compatibility with fresh flavor leaves only when blended at a low proportion, while the optimal proportion with medium flavor leaves from Tongren, Guizhou was10%. However, the overall compatibility with robust flavor leaves was better, and the overall compatibility score increased steadily with the increase of the blending proportion within the experimental gradient range. The developed sensory evaluation method for tobacco compatibility could accurately and quantitatively describe the compatibility of tobacco leaves and provide methodological support for the design and maintenance of tobacco module blending and tobacco blends.
