Abstract:
In order to evaluate the sensory quality of domestic cigars in China, a sensory quality evaluation method was developed, including evaluation indexes and their definitions, scoring scale, evaluation requirement, result statistics, etc. Domestic cigars of different brands were evaluated by this method. The results showed that: 1) The total interpretation rate of the first 6 PCs of flavor characteristics was 0.737, and the total interpretation rate of the first 2 PCs of quality characteristics was 0.783, indicating that the evaluation indexes could describe the sensory quality of cigars very well. 2) The loading factor of each evaluation index on the selected PCs showed that the description of each sensory quality characteristic of cigars required several indexes, indicating that the evaluation indexes of the developed method were relatively complete. 3) The developed method in terms of aroma note, offensive odor, concentration, appearance characteristics, aroma characteristics, smoke characteristics, taste characteristics and combustion characteristics could comprehensively and accurately describe and discriminate the style and quality characteristics of different cigar products.
