烤烟两糖比值和差值与感官品质指标的相关性

Reducing sugar and total sugar ratio and difference correlate with sensory quality indexes of flue-cured tobacco

  • 摘要: 为明确烤烟烟叶两糖(总糖和还原糖)协调性与感官品质的关系,设置8个生态区不同品质梯度烟叶样品制备试验,研究了烟叶两糖比值和差值与感官品质的相关性,并基于随机森林模型研究了两糖比值和差值与常规化学成分指标对烟叶品质的相对贡献率。结果表明:不同生态区烟叶的两糖比值和差值差异显著,豫中和川西南生态区烟叶的两糖比值较高、差值较小,滇东和闽西则相反。两糖比值和差值与烟叶颜色深浅、成熟度、柔软度和油润感等外观品质指标以及香气量、浓度、香气质和评吸总分等评吸品质指标呈显著相关关系。不同生态区烟叶两糖比值和差值对外观和评吸品质指标的贡献率差异明显,豫西和豫中生态区烟叶两糖比值和差值对各外观品质指标的贡献率均较高,滇东、闽西、湘南和川西南次之。豫西和川西南生态区烟叶两糖比值和差值对香气质、香气量和评吸总分的贡献率均最高,两糖比值对评吸总分的贡献率在两生态区分别达到58%和40%,闽西和湘南生态区烟叶两糖比值和差值对部分评吸品质指标的贡献率最高。因此,多数生态区烟叶两糖比值和差值对感官品质的贡献率较高,可作为烟叶化学成分协调性评价的重要指标加以应用。

     

    Abstract: To clarify the relationships between sugar coordination (total sugar and reducing sugar) and sensory quality of flue-cured tobacco, experiments were set up in eight ecological areas with different leaf quality gradients. The correlations of the reducing sugar and total sugar ratio and difference (RRT and DRT) with sensory quality were analyzed, and the contribution rates of RRT, DRT and other chemical components to sensory quality were analyzed based on the random forest model. The results showed that there were significant differences between RRT and DRT in tobacco leaves from the different ecological areas. RRT was higher and DRT was lower in the leaves from central Henan and southwestern Sichuan, but the opposite trend was found in eastern Yunnan and western Fujian. RRT and DRT were significantly correlated with leaf appearance quality indexes such as color, maturity, softness and oiliness, and smoking quality indexes such as aroma quantity, concentration, aroma quality and total sensory score. Significant differences were found in the contribution rates of RRT and DRT to the appearance and smoking quality of flue-cured tobacco in different ecological areas. In western Henan and central Henan, RRT and DRT had higher contribution rates to all appearance quality indexes, followed by eastern Yunnan, western Fujian, southern Hunan and southwestern Sichuan. In western Henan and southwestern Sichuan, RRT and DRT had the highest contribution rates to aroma quality, aroma quantity and total score of smoking quality, and the contribution rate of RRT to the total smoking quality score was 58% and 40%, respectively. In western Fujian and southern Hunan, RRT and DRT had the highest contribution rates to several smoking quality indexes. Therefore, RRT and DRT can be used as important indexes to evaluate the coordination of tobacco chemical composition based on their high contribution rates to the sensory quality of flue-cured tobacco in different ecological areas.
