Abstract: Three major synthetic methods of Amadori compounds, protected and unprotected glucose and protected fructose methods, were reviewed and compared. It was considered that the protected fructose method was preferable to the synthesis of Amadori compounds when an amino acid with poor thermal stability, low reactivity with glucose and requiring for high separation yield was used as a reaction material.
