微波膨胀过程中烟梗及由其制备的颗粒的物理化学变化

Physical and Chemical Changes of Tobacco Stem and Stem Granules During Microwave Expansion

  • 摘要: 为提高烟梗的利用率,采用微波膨胀、造粒和微波定型等工艺制备了膨胀烟梗颗粒,并测定了烟梗、膨胀梗和颗粒的物理结构、常规化学成分和挥发性成分。结果表明:膨胀后,烟梗结构中的片状、层状结构消失,恢复成细胞空腔结构;膨胀烟梗长度变化不显著,宽度和厚度显著(P <0.001)增加,分别平均增加了83.56%和115.56%;自然堆积体积显著(P <0.001)增加,平均增加了257.53%;总糖含量显著减少(P <0.001),还原糖含量明显减少(P <0.01),烟碱、总氮、氯和钾没有显著变化;有36种挥发性成分的相对含量发生了显著变化(P <0.001),主要为呋喃类。

     

    Abstract: In order to improve the utilization of tobacco stem, the expanded tobacco stem granules were made through microwave expansion, granulation, and microwave size fixation. The physical structure, routine chemical components and volatile components of tobacco stem, expanded stem and granules made of it were measured. The results showed that:after expanding, the lamellar structure in stem disappeared and the cell cavity structure recovered; stem length changed a little, while its width and thickness increased significantly (P<0.001) by 83.56% and 115.56%, respectively. The natural bulk volume of stem increased significantly (P<0.001) by 257.53% on average, total sugar and reduced sugar decreased significantly (P<0.001 and P<0.01, respectively). Nicotine, total N, chlorine and potassium changed a little; the relative contents of 36 volatile aroma components changed significantly (P<0.001), most of them were furans.
