弱光胁迫对烤烟化学成分及中性挥发性致香物质的影响

Effects of Weak Light Stress on Chemical Components and Neutral Volatile Flavor Components in Flue-cured Tobacco

  • 摘要: 通过设置全光照与遮光处理(透光率分别为80%、50%、20%),研究了弱光胁迫对烤烟中部叶化学成分和主要挥发性致香物质含量的影响。结果表明:弱光降低了淀粉、还原糖、水溶性总糖的含量,增加了总氮,钾含量;弱光提高了中性挥发性致香物质总量,其中新植二烯含量随光照的减弱而显著提高,而类胡萝卜素降解产物、芳香族氨基酸代谢产物、美拉德反应产物、西柏烷类降解产物所占比例下降。

     

    Abstract: Weak light stress on chemical components and main volatile flavor components in flue-cured tobacco was studied under full natural light irradiation and shading(transmittances of 80%,50% and 20%,respectively).The results showed that:the contents of starch,reducing sugar,total soluble sugar decreased,and the contents of total nitrogen and potassium increased under shading;the content of total neutral volatile flavor components also increased,among them,the content of neophytadiene obviously increased with the decrease of light irradiation,while the proportion of degradation products of carotenoid and cembranes,aromatic amino acid metabolites,and Maillard reaction products reduced.
