真菌发酵新鲜香根鸢尾根状茎产鸢尾香料研究

Studies on Producing Iris Spice from Fresh Rhizome of Iris pallida by Fungi Fermentation

  • 摘要: 从陈化的香根鸢尾根状茎干片中分离得到25株真菌,以固态发酵培养真菌,发酵提取物采用GC/MS分析。结果表明:一株真菌(YW-29)能发酵新鲜香根鸢尾根状茎产鸢尾香料,其净油主要香气成分鸢尾酮含量为3.87%。经鉴定,该真菌为米根霉(Rhizopus oryzae)。因此,利用真菌发酵新鲜香根鸢尾根状茎产鸢尾香料是可能的。

     

    Abstract: 25 strains of fungus were isolated from the slice of dry aged iris rhizomes.The fungi were cultured by solid-state fermentation,and the fermentive extraction was analyzed by GC/MS.The results showed that one of the strains,YW-29,has the ability of producing iris spice via fermenting the fresh rhizomes of Iris pallida.The irone content in the absolute oil is 3.87%,which is the main aromatic component.The fungus YW-29 is identified as Rhizopus oryzae.This finding proves that it is possible to produce iris spice from the fresh rhizomes of Iris pallida via fungus fermentation.
