番茄红素在9%氧气的氮气中的热裂解产物

  • 摘要: 采用GC/MS法分析了番茄红素在9%氧气的氮气中3005,00,800℃下的裂解产物。结果表明:①3种温度下裂解产物中均含有烯烃类化合物和少量的番茄红素,而且随着裂解温度的升高,烯烃类化合物相对含量大幅增加;②低温下裂解有利于醛酮醇类化合物的生成;③3种温度下的裂解产物中都含有一些重要的香味物质如香叶醛1、-甲基-苯乙酮、假紫罗兰酮、金合欢醇、大马酮及去二氢菖蒲烯等;④随着裂解温度的升高,茚及萘类化合物种类及生成量逐渐增多。

     

    Abstract: The pyrolysate of lycopene at 300, 500 and 800℃ in nitrogen of 9% oxygen was analyzed by pyrolysis gas chromatography and mass spectrometry (Py-GC-MS). The results showed that:1) The pyrolysates at the three pyrolysis temperatures always contained olefin compounds and a small quantity of lycopene,and the relative content of olefin compounds increased significantly with the rise of temperature. 2) lower pyrolysis temperature facilitated the generation of aldehydes,ketones and alcohols. 3) The pyrolysis products at all the test temperatures contained some key aroma compounds,such as geranial,1-methylacetophenone,pseudo-ionone, farnesol,damascone and calacorene,etc. 4) The kinds and yields of indenes and naphthalenes increased gradually with the rise of pyrolysis temperature.
