Abstract:
In order to develop a new natural fungal flavor,the exopolysaccharides(EPS)produced by the fermentation of
Funalia trogii were prepared and characterized. The EPS was isolated and purified by Sepharose CL-6B gel cartridge and two fractions of the EPS were analyzed by FT-IR spectroscopy and applied into cigarette to determine their transfer ratio to cigarette smoke. The results showed that the absorption peaks appeared at 810, 880 and 910 cm
-1,it indicated the existence of mannose,and the co-existence of
α and
β glycoside bonds. The transfer ratio of EPS to cigarette smoke ranged from 1.58% to 3.39% with the application range of 0.02% to 0.10%.
