Studies on Producing Iris Spice from Fresh Rhizome of Iris pallida by Fungi Fermentation

  • 25 strains of fungus were isolated from the slice of dry aged iris rhizomes. The fungi were cultured by solid-state fermentation, and the fermentive extraction was analyzed by GC/MS.The results showed that one of the strains,YW-29,has the ability of producing iris spice via fermenting the fresh rhizomes of Iris pallida. The irone content in the absolute oil is 3.87%,which is the main aromatic component. The fungus YW-29 is identified as Rhizopus oryzae. This finding proves that it is possible to produce iris spice from the fresh rhizomes of Iris pallida via fungus fermentation.
