Factors Influencing DDMP Synthesis in Maillard Reaction

Abstract
The influences of various conditions on the yield of 2,3-dihydro-3,5-dihydroxy-6-methyl-4H-pyran-4-one(DDMP) in the Maillard reaction of monosaccharides and amino acids were investigated by simulating the process of cigarette smoking with dry heating.The sensory evaluation of the cigarettes added with DDMP was conducted.The results showed that:1) The highest yield of DDMP was obtained under the conditions of molar ratio of fructose to proline 2:1,oxygen concentration 5%,reaction temperature 150℃,reaction time 7 minutes.2) DDMP could significantly increase the quantity of cigarette aroma and improve the quality of the same to a certain degree.
